Michael’s Margaritas

When I turned 18, my parents decided to throw a Mexican themed birthday party for me, complete with a piñata, black beans and corn tortillas (side note - my mother grew up in Mexico) and my dad whipped up his famous lime margaritas. People still remember it as the best party of our teenage years because it was different at a time when everyone was trying to fit in. When making for six people, I use my food processor with the cake mix paddle in, as a sort of make-shift slush ice machine. But if making for less, feel free to use a cocktail shaker if you have one.

(Makes 6 cocktails) 

210ml tequila (I used Sierra Reposado Tequila)  

150ml Cointreau (or triple sec) 

100ml fresh lime juice 

30g caster sugar

1 bag crushed ice (bash ice cubes with a rolling pin if you can’t get crushed ice)

Fresh limes for slicing into glass 

Sea salt for the rim of the glass - optional but best with! 

  1. Add the tequila, cointreau, lime juice and caster sugar into the food processor and mix. Then add the crushed ice and mix again. 

  2. Pour out some sea salt onto a plate.

  3. Run a slice of lime along the rim of the glasses. 

  4. Place the rim of the glasses into the sea salt and rotate to make the salt stick, then shake off any excess. 

  5. Pour margarita mix into each glass and add a slice of lime.
