Object Recipes : Glass Lemon Squeezer

Title of object: Glass Lemon Squeezer (“Citron-presser I glas” in Danish)

Reason for choice: “It is a simple, functional and intuitive object which has always lived on the blue tiled windowsill in my parents kitchen. I love how the design catches the pips.”

Recipe: Lemon Cake

Ingredients:

  • 230g unsalted butter

  • 230g caster sugar 

  • 4 eggs 

  • 230g plain flour 

  • 3tsp baking powder 

  • 1/2 tsp fine sea salt

  • Zest of 2 lemons, finely grated

  • Juice of 2 lemons (for the syrup)

  • 75g caster sugar (for the syrup)

  • Zest of 1/2 lemon (for decoration)

Method:

  1. Preheat oven to 180 degrees celsius. 

  2. Whisk the butter and the sugar together until it is pale yellow colour and creamy.

  3. Then add in the eggs, one at a time, whisking them into the mix.

  4. In a separate bowl, mix together the flour, baking powder and salt. 

  5. Then sift the flour mix into the butter, sugar and eggs and whisk again. 

  6. Add the grated lemon zest and whisk for a final time until well mixed. 

  7. Butter a tin (average size of 10 x 20cm) - I’ve used a bundt tin here - and line with baking paper. 

  8. Put the mix into the tin and make sure the top is level. 

  9. Bake for 45 minutes until a knife comes out clean. 

  10. While the cake is baking, gently heat the lemon juice and caster sugar for the syrup together until the sugar has dissolved. Do not let it boil.

  11. Take the cake out of the oven and using a fork, make small holes across the cake surface. 

  12. Pour the syrup over the cake and leave to cool a little before serving.
